Cinnamon coconut milk pancakes are the perfect choice for a cool and cozy day. You can snack on it while seeing a movie in your house or laugh over hot gossip with your friends whiling downing some cinnamon coconut milk pancakes with chilled juice to smoothen the way.


Every bite of your cinnamon coconut milk pancakes promises a full blast of nourishment as both cinnamon coconut milk have many great health benefits for both the old and young.


Ingredients (this cinnamon coconut milk pancakes will serve 2)

  • 8 pancakes; vegan & sugar free & gluten free option
  • 2 cups of flour ( I used spelt flour )
  • 1 cup of shredded coconut
  • 2 cups of coconut milk ( learn how to make yours here )
  • 1 mashed banana
  • 1 tsp. salt
  • 1 tsp. ground cinnamon
  • 5 tablespoon of finely grounded flax seeds + some water
  • coconut oil (just a little will be required )


Now let’s prepare the cinnamon coconut milk pancakes

  • Mix flour, shredded coconut, salt and cinnamon in a big bowl.
  • Add some water to the flax seeds and let sit for 5 minutes
  • Mix up with the mashed banana and the two cups of coconut milk.
  • Merge all ingredients.
  • Now heat a little bit of coconut oil in a non-stick pan on medium heat!
  • You can start frying the coconut pancakes.
  • Top with cinnamon, coconut cream, and coconut flakes.
