Spinach-scrambled egg sauce recipe

This recipe might be easy to prepare, the taste is no joke! Plantain lovers: you can thank me later.

Ingredients

– 2 eggs, whisk
– 2 fresh tomatoes, chopped
– 1 small onion, chopped
– A quarter chicken buillon cube
– 200g baby spinach, washed and chopped
– 1 chilli/scotch bonnet/habanero pepper, chopped
– 2 tbsp vegetable oil
– Salt

Directions

1. Add spinach into a large pan placing over medium heat. Bring to simmer for 5 minutes then drain water away and season with pinch of salt.

2. Place a frying pan over medium heat adding onions and tomatoes to fry for 5 minutes, add seasoning to taste.

3. Then add eggs and allow frying for few mins stirring gently to prevent it from burning.

4. Finally, sprinkle in chopped spinach and slowly mix together.

Now, serve with whatever; boiled plantains or yam.
